Vegetable & Lamb Curry

You just can't go wrong with curry. Tons of meat. Tons of veg. Tons of flavor.
Ingredients: recipe adapted from this Vegetable & Lamb Curry
30g butter
1 tablespoon vegetable oil
1 onion, chopped
2 garlic cloves, crushed
1/4 cup red curry paste
1 sweet potato, chopped
1 potato, chopped
400g can tomatoes
400ml can coconut cream
3 cups roughly chopped roast lamb
100g green beans, trimmed, halved

Directions:
Heat butter and oil together in a large saucepan on high. Saute onion and garlic for 1-2 minutes. Stir in red curry paste, cook for 1 minute until aromatic. Add both potatoes and cook, stirring, for 1-2 minutes. Mix in tomatoes and coconut cream. Simmer for 15-20 minutes, until vegetables are tender. Stir in lamb and green beans. Reduce heat to low and simmer for 2-3 minutes to heat through.

Chicken Dressing and Sweet Potato Fries


This meal was very delicious.  I was originally planning to make chicken tenders, but as I was making it I decided to pile them together into a baking dish and it turned out more like dressing.  I love dressing, so I was excited.

Chicken Dressing:
    Ingredients:
  • Chicken tenders
  • Triscuit Crackers (about half a box)
  • Parmesan Cheese
  • Milk
  • Dash of Olive Oil
  • Itailian Seasoning
  • Salt
  • Pepper
    Directions:
       Preheat oven to 375.  Mix milk, olive oil, Italian Seasoning, salt, and pepper in a shallow bowl.  Crumble Triscuits (I use a food processor), then mix Triscuits and Parmesan in another bowl.  Dip the chicken in the liquid mixture, then the dry mixture and cover well.  Then place the chicken in a baking dish, stacking on top of each other.  Pour the remaining dry and liquid mixtures on top.  Cover and bake for 30 to 40 minutes.

Sweet Potato Fries:

    Ingredients:
  • Sweet Potatoes
  • Olive Oil
  • Italian Seasoning
  • Salt
  • Pepper



    Directions:
     Preheat oven to 450.  Peel and chop potatoes into 1/4 inch thickness.  Toss potatoes in olive oil and seasoning then pour out on a baking sheet in a single layer.  Bake for 15 minutes, flip and bake for another 15 minutes.  Next time I probably won't use the Italian Seasoning, I didn't really love the flavor it added.  Overall it was a great meal though!

Easy Cottage Pie

I'm on the other side of the world, therefore I'm in the midst of winter. I know, it's weird. My body is confused by the weather. I decided to make this warm meal on a cooler evening. This was the 3rd meal I chose from the Cole's Supermarket website this week.

I love to look through cookbooks or magazines. The images are so tantalizing. I think it's hilarious when I finish cooking and my creation looks nothing like the image. Here's an example:

It tasted delicious, so who cares what it looks like, right? We froze half of this one, so our freezer is filling up.
