You can't beat the combination of anything chocolate and peanut butter either. These little treats are delicious and I'm glad I found this <a href="http://www.browneyedbaker.com/2010/02/24/peanut-butter-oatmeal-chocolate-chip-cookies/">recipe </a>on Pinterest.</span><br />
<span style="font-family: Georgia, Times New Roman, serif;"><br /></span>
<span style="font-family: Georgia, Times New Roman, serif;">Ingredients:</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">1/2 cup creamy peanut butter</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">1 cup all-purpose flour</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">1 teaspoon baking soda</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">1/4 teaspoon salt</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">1 stick unsalted butter, room temperature</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">1/2 cup granulated sugar</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">1/3 cup brown sugar</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">1/2 teaspoon vanilla extract</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">1 egg</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">1/2 cup rolled oats</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">1 cup chocolate chips</span><br />
<div class="separator" style="clear: both; text-align: center;">
<a href="http://1.bp.blogspot.com/-zrOG_qDiJwk/UD4DE346EZI/AAAAAAAABBY/js_M4nWW06U/s1600/IMG_0749.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em; text-align: center;"><span style="font-family: Georgia, Times New Roman, serif;"><img border="0" height="300" src="http://1.bp.blogspot.com/-zrOG_qDiJwk/UD4DE346EZI/AAAAAAAABBY/js_M4nWW06U/s400/IMG_0749.jpg" width="400" /></span></a></div>
<br />
<span style="font-family: Georgia, Times New Roman, serif;">Directions:</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">Preheat oven to 350 degrees. Line two baking sheets with baking paper and set aside. Whisk together the flour, baking soda and salt. On medium speed, cream together the butter, peanut butter, granulated sugar, brown sugar and vanilla extract for about 3 minutes (I gave myself a right arm workout because I don't have a mixer). Add the egg and beat to combine. On low speed, gradually add the flour until combined. Stir in the oats and chocolate chips. Drop about 3 tablespoons of cookie dough onto baking sheets about 2 inches apart. Repeat until all cookie dough is on baking sheets. Bake for 10 minutes, or until cookies are lightly golden and irresistible to taste. Cool completely on the baking sheet and store in an airtight container at room temperature.</span><br />

Every time I go to the grocery store, I learn something new about Aussie culture. I headed to the freezer section for this week's learning opportunity to find this:</span><br />
<div class="separator" style="clear: both; text-align: center;">
<a href="http://1.bp.blogspot.com/-LW1shzA3fgM/UDngB2k4CbI/AAAAAAAABA4/PG1IflSI3LM/s1600/IMG_0747.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><span style="font-family: Georgia, Times New Roman, serif;"><img border="0" height="300" src="http://1.bp.blogspot.com/-LW1shzA3fgM/UDngB2k4CbI/AAAAAAAABA4/PG1IflSI3LM/s400/IMG_0747.jpg" width="400" /></span></a></div>
<span style="font-family: Georgia, Times New Roman, serif;">Yep, tater tots are called potato royals over here. Thank you, Australia, for making me feel better about making Potato Royal Casserole.</span><br />
<span style="font-family: Georgia, Times New Roman, serif;"><br /></span>
<span style="font-family: Georgia, Times New Roman, serif;">Ingredients:</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">1 can cream of mushroom soup</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">1 cup milk</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">1/2 tablespoon olive oil</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">1/2 cup chopped vidalia or sweet onion</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">1/4 cup chopped green bell pepper</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">1 pound ground beef</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">1 teaspoon minced garlic</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">1/2 teaspoon Cajun seasoning</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">salt and pepper</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">1/2 cup shredded cheddar cheese</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">1 pound package frozen tater tots</span><br />
<a href="http://1.bp.blogspot.com/-V2NnixksLfM/UDngEHm_anI/AAAAAAAABBA/niaCsuXZTyQ/s1600/IMG_0748.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em; text-align: center;"><span style="font-family: Georgia, Times New Roman, serif;"><img border="0" height="300" src="http://1.bp.blogspot.com/-V2NnixksLfM/UDngEHm_anI/AAAAAAAABBA/niaCsuXZTyQ/s400/IMG_0748.jpg" width="400" /></span></a><br />
<span style="font-family: Georgia, Times New Roman, serif;">Directions:</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">Preheat oven to 350 degrees. Spray 9x12 casserole dish with non-stick spray. Whisk together the cream of mushroom soup and milk until well blended and set aside. Add olive oil to a large skillet and saute onion and bell pepper until softened but not brown. Stir in the ground beef and brown; drain and return to skillet. Add the minced garlic, cook, and stir another minute. Add Cajun seasoning, taste, and add salt and pepper to taste. Transfer meat mixture to the casserole dish and sprinkle cheddar cheese on top of meat mixture. Evenly pour the soup mixture over the top. Arrange the tater tots on top and bake uncovered at 350 degrees for 45 minutes to 1 hour, or until tater tots are nicely browned and crisp. Sprinkle shredded cheddar cheese on top and return to the oven until cheese is melted. Cut shrimp into thirds making bite size pieces. Saute in two teaspoons of olive oil and season with salt and pepper over medium heat just until done. <span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Directions:</span><br />
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Preheat oven to 350 degrees F. Grease a mini muffin tin. Cream butter, white sugar, and brown sugar in bowl until light and smooth. Beat in eggs and vanilla. Gradually add flour, salt, and baking soda until everything is mixed. Roll dough into balls that are 1.5 inches thick. Pop them in the mini muffin tin and bake for 10-12 minutes until golden brown. Remove from the oven and let sit for about 2 minutes. Make wells for the Nutella using a spoon or 1/4 measuring cup. Add 1 tbsp of Nutella into each cup; feel free to swirl the Nutella around once it melts a little. Let cool for 15-20 minutes. Each time we ate them, we microwaved the cookie for a few seconds to melt the Nutella.</span><br />

<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Directions:</span><br />
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Dice the onion and mince the garlic. Begin cooking them in a large pot over medium heat with olive oil for 3 minutes. Add the carrots and potatoes to the pot and continue to saute. Add the chicken to the pot along with the basil, parsley, thyme, and black pepper. Add eight cups of water. Cover, bring to a boil over high heat, then reduce the heat to low and simmer for one hour. Make sure the pot continues to simmer for the whole hour. After an hour of simmering, remove the chicken from the pot. Using two forks shred the chicken. Season the broth with salt. Add the noodles to the pot, turn the heat up to high and boil the noodles until tender. Return the shredded chicken to the pot, add two more cups of water. Taste the season again with salt if needed. </span>

This recipe for Southwestern Stuffed Peppers is tasty, but be sure and add some more spices of your choice. </span><br />

<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;"><br /></span>
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Directions:</span><br />
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Combine beef, onion, seasoning mix, and egg in a large bowl. Add cooked rice and mix well. Cut peppers in half lengthwise, remove seeds and membrane. Spread tomatoes on the bottom of an ovenproof 13x9 inch baking dish. The liquid from the tomatoes will reduce during cooking, so if you like sauce, then add 1 cup of water. Place peppers, cut side up, on top of the tomatoes. Spoon beef mixture into peppers. Top each pepper with salsa. Bake in preheated 375 degree oven for 45 minutes or until beef is cooked thoroughly and peppers are soft. Cover each pepper with cheese and return to oven until the cheese melts. Serve with sour cream and additional salsa.</span><br />

<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Ingredients:</span><br />
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">2 cloves garlic</span><br />
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">1/3 cup pine nuts, toasted</span><br />

<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">1/3 cup parmesan cheese, freshly grated</span><br />
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">1/3 cup olive oil</span><br />

<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;"><br /></span><br />
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Directions:</span><br />
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Preheat oven to 400 F. To make the pesto, pulse garlic, toasted pine nuts, and basil in a food processor until finely chopped. Add parmesan and mix well. With the food processor engine running, slowly drizzle in the oil. Place salmon fillets onto an oiled baking tray, season both sides with salt and pepper. Spread the pesto over the top of each fillet and sprinkle a light layer of breadcrumbs over the pesto. Bake the salmon for 12 minutes or longer depending on the thickness of fillet; it's done when the fish flakes easily with a fork. Serve with a salad and enjoy this quick dinner!</span>

When I think about British culture, high tea and scones immediately come to mind. I made some blueberry scones in honor of you, Queen Elizabeth.<br />

Crazy. Year 2 will be dedicated to exploring more of Australia, so we spent a long weekend in Melbourne. This city is wonderful with its food, entertainment, and short flight from Sydney.</span>
<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="http://1.bp.blogspot.com/-nDxZhsulaso/T8L8RnLfp_I/AAAAAAAAAro/VfPBMXE4kG8/s1600/IMG_1395.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;"><img border="0" height="320" src="http://1.bp.blogspot.com/-nDxZhsulaso/T8L8RnLfp_I/AAAAAAAAAro/VfPBMXE4kG8/s320/IMG_1395.jpg" width="320" /></span></a></div>
<div style="text-align: left;">
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Since this blog is dedicated to food, I'll post about our brunches we thoroughly enjoyed. Eliott used <a href="http://www.urbanspoon.com/f/71/7007/Melbourne/Brunch-Spots">Urbanspoon</a> to find a brunch location for us each morning. Our two favorites were Hardware Societe and <a href="http://sevenseeds.com.au/seeds/">Seven Seeds</a>. I wish I could eat at these cafes over and over and over again.</span></div>
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;"><br /></span>
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Hardware Societe gave me the opportunity to try French cuisine and I ordered the Croque madame. Yum.</span><br />
<div class="separator" style="clear: both; text-align: center;">
<a href="http://2.bp.blogspot.com/-B5jvO0RvBbo/T8L8Tm7BrZI/AAAAAAAAArw/tvY7ByIEvNA/s1600/IMG_1397.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;"><img border="0" height="320" src="http://2.bp.blogspot.com/-B5jvO0RvBbo/T8L8Tm7BrZI/AAAAAAAAArw/tvY7ByIEvNA/s320/IMG_1397.jpg" width="320" /></span></a></div>
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">At Seven Seeds, I satisfied my sweet tooth with Brioche french toast with spiced baked pears, mascarpone and toasted pecans. Eliott had a fried egg with smoky berkshire bacon, roasted cherry tomatoes and tomato relish on a toasted poppyseed bagel. This cup of coffee was the best <a href="http://en.wikipedia.org/wiki/Flat_white">flat white</a> I've ever had.</span><br />
<div class="separator" style="clear: both; text-align: center;">

<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Our last day was quite classy. We had American donuts and Dr. Pepper. I've never been so happy.</span><br />

It's so good. I'm a big fan of Asian cuisine in general. Speaking of general, I can't get enough of General Tso's chicken. When we visited friends and family at Christmas, we stocked up on General Tso's seasoning mix. </span>
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;"><br /></span><br />
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">I'm surprised we got through security with the 10 packets I had stuffed in shoes and pant pockets. This little discovery in the International Food Section of my local Kroger made me happy a couple of years ago. Who knew I would be hoarding them in my suitcase to carry across the world? </span>

It's easy and fast.<br />
<br />
Ingredients:<br />
2 cans (5 oz. each) light tuna in water, drained, flaked<br />
1 package stuffing mix for chicken<br />
1 cup shredded mild cheddar cheese<br />
3/4 cup water<br />
1 carrot, shredded<br />
1/3 cup mayonnaise<br />
2 tablespoon sweet pickle relish<br />
<br />
Directions:<br />
Mix all ingredients. Refrigerate for 10 minutes. Spray nonstick skillet with cooking spray. Heat skillet on medium heat. Use 1/3 measuring cup to scoop portions of tuna mixture, in batches, to skillet. Flatten into patties with the back of your spatula. Cook 6 minutes (3 minutes each side) or until golden brown on both sides.<br />
<br />
For your amusement, I would like for you to see the comparison between Kraft's photography and mine. Don't judge. They taste good and that's all that matters in this household.<br />

I went to the library instead of the world wide web to find this recipe. I flipped real pages and checked out the library with my library card at the <a href="http://www.cityofsydney.nsw.gov.au/Development/CityImprovements/CompletedProjects/SurryHillsLibraryCommunityCentre.asp">Surry Hills Library</a>. Nerd alert.</span>
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;"><br /></span><br />
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Ingredients:</span><br />
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">1 kg/2.2 pounds baby potatoes</span><br />
<div>
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">1 clove garlic, crushed</span></div>
<div>
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">1 tablespoon finely grated lemon rind</span></div>
<div>
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">2 tablespoons lemon juice</span></div>
<div>
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">2 tablespoons olive oil</span></div>
<div>
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">2 tablespoons horseradish cream</span></div>
<div>
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">50g rocket/arugula leaves</span></div>
<div>
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">salt & pepper</span></div>
<div>
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">125 g lamb cutlets (we had 2 each)</span></div>
<div>
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">4 slices of bacon</span></div>
<div>
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">4 sprigs of rosemary</span></div>
<div>
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;"><br /></span>
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Directions:</span></div>
<div>
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Place the potatoes in a large saucepan of salted cold water and bring to a boil. Cook for 18-20 minutes until tender. Drain. Return to the pan and lightly crush. Add the garlic, lemon rind, and juice, olive oil, horseradish, salt & pepper and set aside. Wrap each lamb cutlet with a rasher of bacon and secure with rosemary. Heat a large frying pan over high heat and cook for 4 minutes each side for medium or until cooked to your liking. Serve the lamb with the crushed potatoes over rocket. We obviously had green beans too, but those were leftovers.</span></div>

<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;"><br /></span><br />
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">We ordered flat whites.</span>

There are other great items on their menu too, but you can't go and not eat these two items. I usually order water at restaurants, but Olive Garden is one place where I get giddy thinking about the Peach-Raspberry Iced Tea coming my way. Eliott and I shared Stuffed Chicken Marsala and we left feeling stuffed. After flying back to Australia, we began to miss the American dining, so I made this Olive Garden Salad. Inspiration came from <a href="http://www.sixsistersstuff.com/2011/12/olive-garden-date-night-at-home-recipes.html?utm_source=feedburner&utm_medium=feed&utm_campaign=Feed:+blogspot/yJOAYq+(Six+Sisters'+Stuff)">here</a>.</span>

<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Directions:</span><br />
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">Blend all salad dressing ingredients together and chill until ready to serve. Place bag of salad in bowl and add iceberg lettuce to mixture. Place red onion, black olives, banana peppers, tomatoes, and croutons on top of salad. We don't mind eating casseroles, but we don't love eating leftovers for 10 days in a row. This recipe serves 4 and it was fast, healthy, and fulfilling. It felt like we were at a restaurant when I decided to make a side dish. I tend to cook one-dish-dinners, so the green beans were warmly welcomed. We had two other friends over to share this meal with us and we all really enjoyed it. Cheers to friends and food!</span><br />

We have thoughts of Chick-fil-A, McAlister's, and Newk's often in Australia. This dinner was my attempt to replicate items from McAlister's, so we had Club Sandwiches, Potato Soup, and Sweeeeeeet Tea. </span>

So, when I needed a dessert for small group at our house last night, I did a Google search for "easy desserts with cream cheese" and found <a href="http://www.cooks.com/rec/doc/0,1713,146189-251205,00.html" target="_blank">this</a>. Now, I know I haven't posted in a while, but I have record for not being able to make something just as the recipe says. So here is my version:<br />
<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="http://4.bp.blogspot.com/-fIuZZ1qJhfo/Tyh_5xlCm7I/AAAAAAAAAac/DcZff9OETNI/s1600/IMG_2404.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="http://4.bp.blogspot.com/-fIuZZ1qJhfo/Tyh_5xlCm7I/AAAAAAAAAac/DcZff9OETNI/s320/IMG_2404.JPG" width="320" /></a></div>
<br />
Ingredients:<br />
<ul>
<li>1 can crescent rolls (I used reduced fat.)</li>
<li>2 8oz packages of cream cheese (I used neufchatel cheese.)</li>
<li>1 cup of sugar</li>
<li>1 tsp vanilla</li>
<li>1 egg yolk (I'll probably just use the whole egg next time.)</li>
</ul>
Directions:<br />
Preheat oven to 350 degrees. Roll out crescent rolls into the bottom of a 9"x13" pan. Mix cream cheese, sugar, vanilla, and egg. Pour over crescent rolls. Bake for 15 minutes. I think it would be awesome to add some chocolate chips or apples and cinnamon next time. I served it warm, so it was a little runny, but it firms up after it cools. It tasted delicious though!<br />

I'm sure the waiter or waitress hated us. We would order chips and salsa, Shirley Temples, and stay for hours. When I ran across this recipe, I was so excited. I found it over at <a href="http://www.sixsistersstuff.com/2011/11/chilis-copycat-salsa-recipe.html">Six Sisters' Stuff</a>.</span><br />

We did two things during the holiday: spent quality time with friends and family and ATE too much food. We ate at some of our favorite restaurants and enjoyed the cooking from our mother's kitchens. Australia is struggling in the Mexican food department, so I was happy to indulge while in Texas. In fact, I apologized to Eliott for eating Mexican food so much. We're happy to be back in sunny Sydney. To start 2012 off, this is a new favorite dish of ours. Maybe I'll start eating salmon like I ate Mexican food in Texas.<br />

Ingredients:<br />
1 bag of frozen hash browns<br />
1/2 cup extra light sour cream<br />
2 tsp horseradish cream<br />
150 g smoked salmon<br />
1 bunch chives, snipped<br />
50 g rocket<br />
olive oil<br />
<br />
Directions:<br />
1. Preheat oven to temperature indicated on hash brown package. Line a baking tray with non-stick baking paper. Arrange hash browns on trays and cook according to packet directions. 2. Mix the sour cream and horseradish cream together. Chill in refrigerator. 3. Spread mixture on cooked hash browns. Divide the smoked salmon between hash browns and top with chives, rocket, and drizzle with olive oil.<br />

<li>we prefer just 1 hash brown per stack instead of the 2 shown</li>
<li>we didn't buy chives the second go-around</li>
<li>we forgot to drizzle the olive oil, but it wasn't missed</li>
